Ingredients
  

  • 4 slices smoked bacon, chopped
  • 1 onion, medium, finely chopped
  • 2 cloves garlic, minced
  • 1 lb green beans, ends trimmed
  • ½ lb red potatoes, cubed
  • 2 cups chicken broth
  • 2 tbsp butter
  • salt and pepper to taste

Instructions
 

  • Cook chopped bacon in a skillet over medium heat, stirring occasionally, until evenly browned, 8 to 10 minutes. Drain bacon pieces on a paper towel-lined plate
  • Melt butter in a skillet with a lid over medium-low heat. Add onion; cook and stir until onion is translucent, about 5 minutes
  • Add the minced garlic to the onions and cook for an additional minute
  • Stir in cooked bacon, green beans, and chicken broth. Bring to a boil, cover, and simmer over low heat until green beans start to become tender, about 10 minutes
  • After the green beans have cooked for 10 minutes, add the cubed red potatoes. Stir, cover, and continue cooking for an additional 15-20 minutes, until the red potatoes and green beans have softened
