Ingredients
  

  • 3 cucumbers sliced thinly
  • 1 red onion, sliced thinly
  • 1 tsp sugar
  • ½ cup white vinegar
  • ½ tsp garlic powder
  • 2 tbsp olive oil
  • salt and pepper to taste
  • fresh dill or parsley for garnish (optional)

Instructions
 

  • Peel the cucumbers (optional), and slice them thinly. The thinner the slices, the more flavorful and marinated the cucumbers will be.
  • Slice the red onion as thinly as possible. You might want to use a mandoline slicer for this, but be careful.
  • In a large bowl, combine the cucumber and onion slices.
  • In a separate bowl, whisk together the white vinegar, olive oil, and sugar until the sugar is fully dissolved.
  • Pour the vinegar mixture over the cucumbers and onions, making sure all the slices are well-coated. Season the mixture with salt and freshly ground black pepper to taste.
  • Cover the bowl with a lid or wrap it tightly with plastic wrap. Refrigerate the salad for at least 2 hours before serving. This allows the flavors to meld together. The longer it sits, the more the flavors will develop, so feel free to make it ahead of time.
  • When you're ready to serve, you can garnish the salad with fresh dill or parsley if you like. Enjoy this cool, tangy, and crunchy salad as a side dish at your summer BBQ, or as a refreshing snack.
