For the flounder:
- 2 lbs skinless flounder fillets, fresh or frozen
- 1 cup Panko breadcrumbs
- 2 eggs, large
- 2 cloves garlic, minced
- 4 tbsp melted butter
- vegetable oil
- salt and pepper to taste
For Tartar Sauce:
- 1 cup Mayonnaise
- 1 tbsp Pickle relish or finely diced dill pickles
- 2 tbsp Lemon juice
- 1 tbsp Finely minced sweet onion
- Salt and pepper, to taste
Preheat your oven to 400 degrees F (200 degrees C) and lightly grease a large, shallow baking dish
If using frozen flounder, thaw it in the fridge for several hours.
Place the flounder fillets in the prepared baking dish. Drizzle with lemon juice, a bit of vegetable oil, and a tablespoon of melted butter
In a shallow bowl, combine the panko breadcrumbs, grated Parmesan cheese, minced garlic, salt, and lemon pepper. Beat the eggs in a separate bowl. Dip each flounder fillet into the egg, then coat with the breadcrumb mixture, pressing gently to adhere. Arrange the coated fillets back on the baking dish.
