In a large mixing bowl, combine eggs, milk, sugar, and salt
Slowly add in flour and softened butter cubes. Using a stand mixer with a dough hook attachment (or by hand if you prefer), start to mix the ingredients together until a dough begins to form.
While the dough is still sticky, start adding the softened butter piece by piece. Make sure each piece is incorporated before adding the next. This process should take about 5-10 minutes.
Continue to knead the dough until it becomes soft, elastic, and shiny. This should take another 10-15 minutes in a stand mixer, or a little longer by hand.
Once the dough is well kneaded, cover the bowl with a damp cloth or plastic wrap and let it rise in a warm place until it doubles in size. This should take about 1-2 hours.
After the dough has risen, punch it down to release the air. Turn it out onto a lightly floured surface and divide it into 12 equal pieces for larger sliders, or 16-20 pieces for smaller sliders.
Roll each piece of dough into a smooth ball and place them on a baking tray lined with parchment paper. Leave enough space between each ball for them to expand.
Cover the tray with a damp cloth or plastic wrap and leave them to proof for another 1-2 hours, or until they've doubled in size.
Preheat your oven to 375°F. Beat the remaining egg and brush the top of each bun with the egg wash. Sprinkle with sesame seeds if desired.
Bake in the preheated oven for about 15-20 minutes, or until the buns are golden brown.
Let the buns cool on a wire rack before slicing and serving.
Notes
Feel free to top buns with sesame seeds or poppy seeds for added texture.
